The hotel is just 150 m from the Hauptbahnhof (main railway station) according to the homepage of the hotel. Guess from the closest corner/exit. An ICE train can be alone 400 m long.
Thus I would suggest to take the ICE to Halle, not Leipzig.
From: FRA airport
Leipzig and Halle are both part of the MDV local public transport network.
detailed route maps for Leipzig and Halle
Single ticket Halle to Leipzig is EUR 5,70.
This covers the S-Bahn and regional trains (RB, RE) between both cities. As well as all other local public transport shown on the above two maps.

No. You would have to buy an additional ticket and take a train from Leipzig to Halle. However, the fastest connections from Frankfurt airport to Halle don´t go via Leipzig but with a change in Weimar; you will lose about 1 h through the Leipzig detour.
If your ticket is a normal, full price one, you can possibly exchange it the day before at no additional charge (except the price difference).

Than you can definitly change it. Problem is I guess the "day before".
Just tell the conductor your mistake. If you're on a direct train he/she will mostlikely just say this is OK (Halle is EUR 66, Leipzig EUR 67). Otherwise he/she can issue a new ticket. But don't expect that you'll get the 1 Euro difference back. There is rather a small service fee on this. The "worst" thing which could happen is that the conductor suggests to travel to Leipzig and from there to Halle.
Another option is to skip the part from Weimar to Leipzig. And buy a new ticket from Weimar to Halle.
RB train Weimar to Halle EUR 14,20 (1:17)
Weimar to Halle via Leipzig will need approx. 1:50 (Leipzig - Halle on regional trains or S-Bahn EUR 5,70)
