Former hotel name @ 161 Sussex street ?

Anyone remembers the name of the hotel (frequented by mostly Japanese businessman) at 161 Sussex Street ? (now it's a Hyatt Regency ).. The hotel was (still) open around 2002 - 2005.

They had a celebrity Japanese chef at that time...

Full marks indeed to Bokhara.

At the time, their sister hotel was located at the address of the former - and very iconic - Chevron-Hilton at Potts Point, which was later demolished for the building of Nikko Potts Point (which subsequently became the Landmark Parkroyal)

The Nikko used to do a very decent seafood buffet, if I recall correctly, & was a convenient place to put up visiting 2nd XI staffers, as it was quite close to our office at the time.

Yes I too recall that Bokhara, but the restaurant name in the hotel escapes me at this time.

The one thing I do vividly recall, was that when the Nikko first opened, I was really excited as it was an opportunity for me to show visiting Japanese colleagues, that Blue Angel and Flanagan’s Afloat was not the be all and end all of seafood Sydney 😊

That was back in the days when The Summit was huge, and Bathers Pavillion was still Micha’s.

Hahahaha absolutely Capt. I get the occasional reminder from my wife when I mention something nostalgic, and I get a very blank look 😊

3rd son did did some of his chef's apprenticeship at the Nikko. He's not in the business any more but he really enjoyed that experience. The buffet, he recollects, was called The Buffet at the Nikko but he didn't work the a la carte restaurant and can't recall that name.
