I would skip Matagalpa to give you an extra day in Leon and near Granada or on Ometepe. You only have one full day in Leon, one full day in Matagalpa and two days on Ometepe.

It would help to know what your interests are. Leon is a great colonial city and has volcanoes (easy, medium and hard ones) and beaches. We were there around Christmas, you will like the nativity scenes and La Gigantona. Matagalpa has coffee, birds, mountainous scenery. A good place for hiking. Selva Negra and Jinotega are worth a visit. A day in Granada is fine but you miss out on several great day trips from Granada like volcano Masaya, volcano Mombacho, Lake Apoyo... Ometepe has a lot to offer, again depending on your interests... there is hiking, kayaking, swimming, horseback riding, wildlife...

Are you staying on a beach north or south of SJDS? Beaches get very busy around Christmas-New Year.

To go from Granada to Ometepe you go to Rivas and then San Jorge (not San Jose). No need to spend a night in San Jorge. There are many daily ferries. You have to make a reservation to take your car on the ferry, ask your car rental agency or hotel.

I can't help with luxury hotels as we are budget travelers. But there are many great hotels in Granada and Leon. Hopefully others will have suggestions. You should book soon as some hotels will already be fully booked for Christmas-New Year. I hear great things about Totoco Ecolodge on Ometepe but they might be booked.

Leon Hotel...El Covento, about as close to you specifications as you will get in Leon. Plant to do just walking around the main part of town..has a nice vibe.

Matagalpa Hotel...Montebrisa..right in town and very nice. Could stay at Selva Nega, but food is not so hot and you can get a poor room if has not been renovated. Better to go there as a day trip to hike or visit the farm. It's worth the drive from Leon to Matagalpa as really a good view of rural Nicaragua and a hub town for that part of the country.

Granada..in town, Tribal hotel..first class and off the tourist track..but very close to everything. About as close to "luxury" as you will find in Nicaragua. Close by..Mombacho Lodge...about 20 minutes away on the Volcano in the nature reserve. Easy to get into Granada and all the places to see around there. Modern cabins. Lots of "Nature" without roughing it.....Things to do..plenty..tour of the lake and isletas, the churches, most of a good tour of the city can be done in a day...visit Mombacho..hike/walk in the cloud forest, monkeys, birds.

Ometepe...Tototoco Lodge...other places as well if they are booked. I prefer the East side near the beaches where the two islands come together.

Remember to book ferry to Ometepe...pax don't need reservations, cars do ...most of the time.

Be good to book rooms now..lots filling up as this is really the high season
