Is there a spot (that is easy to get at) that people can watch the rafts go by through the rapids?

the class III sections are downstream from white have and there is a rails to trails bike path all through the gorge. the same companies that run the raft trips will gladly rent you a bike and shuttle you to the nearest access point for the lehigh river

If you cross the pedestrian bridge and take the Fern Loop Trail, after ascending the hill there is a small side-trail on your left heading down to the river (when you hear rapids-noises from the main trail you are close to the cut-off). There you can sit on a rock and watch rafters navigate the most difficult portion of the rapids (where once I actually fell out of the boat). Alternatively, on the other side of the river, park at the entrance to Cucumber Falls and walk the trail down to the river. At the water's edge is where the rafters wait for their turn to attempt the same rapids and you can watch the action from there.

Thanks! Not sure if we have that much time to hike in. Can we see anything from where the river runs through the town of Ohiopyle itself? It is really just a lunch stop for us between Laurel Caverns and Fallingwater.

At the falls overlook you can watch folks put in their rafts downstream and sometimes kayakers will paddle around against the current at the base of the falls. You can't see anyone running rapids from the town however.

I forgot to mention. Be sure to visit the new visitor center where you get a great view of the falls.

Any chance your trip happens to be on Saturday 8/22? If so you'll have plenty of company to watch kayakers and the occasional canoe paddle over the falls:

Any other time you can walk to Entrance Rapid in just a few minutes. Park at the lot of the Meadow Run slides, and walk downstream to where Meadow Run meets the river.

You can also park in the lot just across the railroad tracks and follow the rail trail to the next bridge over the river (not the bridge right in town). From the bridge you can watch rafters and kayakers paddle through the appropriately named Railroad Rapid. Railroad is the site of frequent, but minor mayhem as rafters fail to get left of some rocks.
