Molecular cuisine has always been an intriguing subject when it comes to the fine dining scene. The element of suspense simply takes the enjoyment of food to another level. That was exactly why we were partcularly looking forward to our visit to the Molecular Tapas Bar this night. And Chef Jeff Ramsey made things simple for us - there was only one tasting menu served, one which happened to be a nice blend of traditional recipe and innovative molecular gastronomy.

Dinner was served at the counter where only 8 guests were served every session (2 sessions per night). We got to see Chef Ramsey working diligently behind the counter and after each dish was served, he explained each and every ingredient in great details. That was important because most often than not, we had no clue what we were putting into our mouth!

The most interesting dish had to be the miso soup "jello ball" served with tofu pearls and seaweed powder. We also got to see how they worked the caviar box first hand. In seconds, "caviar" of sweet corn flavour was produced and it was refreshing.

But the star of the night belonged to the A5 wagyu beef. It was simply magnificent and you got the feeling that you were having a fatty toro that melted right in your mouth. The best part of all, I got 2 slices of heaven since one diner was absent. Thank you, Jeff!

We were thoroughly entertained throughout this 2-hour gastronomic journey. All the main courses including the salmon, the pork's cheek, the lamb (called xiao long bao) and wagyu beef were of superb quality. It's definitely worth every single yen.

Having eaten at Mini Bar, Alinea, e, and a few others, I thought that this may not live up to my past experiences, but it did. Jeff was wonderful in his explanations, the tastes were all amazing and the whimsy of the whole experience added to the magic.

Had been looking forward to eating here for a long time and it didn't disappoint. As you sit down at the marble bar little dishes are floating in front of you suspended by magnets in mid-air, it gives you an idea of what you are in for. But for all the science used to amaze you the integrity of the ingredients are always respected and the tastes and textures are very clear and intense. Service was very smooth and the head chef very personable, his guidance was all in Japanese though the offer of English was always there. We took the taster wine menu (4 glasses) to go with the dinner and the final bill for two was nearly 50,000 yen so it's not cheap but where else can you puff 'smoke' out of your nose as part of the evening's entertainment? (it comes after the beef course).
