We enjoyed every moment of our Making Tracks getaway to Northern Edge. From our welcome from Jeff (our amazing guide for all things ourdoorsy), to the incredible dog sledding adventure with Ed, to the wildlife sightings, snowshoeing, cross country skiing and jumping in the snow after luxuriating in the Finnish sauna, our adventure was amazing. We loved the "off the grid" appeal of the facilities (only solar power so don't expect the Hilton and there is no wifi) which was further enhanced by the glowing fireplaces throughout, the cosy slippers waiting to warm some toes, the rustic decor of the lodging. (Be prepared for using nonflush toilets - but they don't smell in the least - and there are regular toilets and hot running water in the lodge for those who prefer the comfort of home.) So we had no idea that Chef Gregory was a magician at creating fabulous meals from his tiny kitchen overlooking the snow covered lake. He had his guests drooling with anticipation as he recited before each meal the local ingredients (from herbs to meats, fresh pressed basil oil to Scotch ale) that composed his menu of organic delights. His passion for the environment and partnering with local growers make each meal an adventure in its own right. And he met each dietary request with ease, including glutin-free and vegan. And so we were all content to contribute to the technology free environment by hand washing our dishes in hot sudsy well water, laughing with our new friends over drying and putting away techniques. Ending the day with a cup of their incredible blend of organic coffee or hot chocolate, especially after a late afternoon skate on the pond or a game of cards with other visitors, was an added bonus. Kim and Jeff, who run all the program while the owners are away, are absolutely incredible. I highly recommend this winter adventure to anyone who loves the great outdoors.More
