The restaurant has for years been called "La Escondida". Most locals still call it that. We had a small birthday gathering there today and enjoyed it. One side tends to be quieter and I like the palapas. I always find lots to eat that is quite good. Today they had 7 of Oaxaca moles available and one of my party was thrilled to be able to taste all of them. They brought us a small birthday cake free and we got great service.
It is not someplace that we go often but it is fun to see so many celebrations. Today there were at least 3 other birthdays and a big gathering with music and dancing. It is really a place to see Oaxacans celebrate in an indoor/outdoor setting.

It's not high end cuisine but everything tastes very well and the choice of different is really overwhelming. Drinks are not include in the buffets price and there is no menu for them. But the food is really worth be price. We combined our lunch there with the vist of the Tule tree.

This is an experience not to be missed. The restaurant is a ways out of Oaxaca city, but worth the cost of transport. It is a huge place offering over 130 items in their buffet, featuring virtually every Oaxacan and Mexican food you can think of. We went on a Sunday afternoon and the place was packed with locals (we think we were the only non-Mexicans there), but because it is so large, there was never a wait or a problem moving around.

Service is excellent and it appeared that there were about half as many waiters or waitresses, clean-up people, cooks, and supervisors as there were customers. The selection of food was basically overwhelming, including many dishes that we didn't have a clue about. But the people there were very accommodating when asked "what is this?" (Not a lot of English spoken, as this is primarily a restaurant for locals and Mexican tourists.) We ate little bits of many dishes over a two hour period and still didn't come close to sampling everything we wanted to try.

In one spot there is a large grill that is constantly being covered by beef and pork ribs, chorizo, along with miscellaneous steaks, chops, and slabs of meat. Nearby is a flat griddle where fish fillets are being fried. There is also a station where meat gets sliced off a spit on demand for tacos or ???? All this along with huge tables and stations full of large bowls and platters of amazing food. There was even a monstrous pan with a whole roast pig, along with large carving knives so that customers could serve themselves.

We live in Mexico and have many many years of experience with Mexican food and we both thought that virtually everything that we ate was first class, top notch! As a result, we think that this was possibly the best buffet we've ever been to. Typically we skip buffets as the food tends to be mediocre at best, but we will make sure to return to the El Sabor on our next trip to Oaxaca. We truly had a wonderful experience and recommend it highly.

In this buffet restaurant can be found a good representation of the different regions of Oaxaca food. You can find in it the seven different moles that are served in the state, and many more regional dishes such as Tlayudas con asiento y Tasajo, enmoladas, chiles rellenos (stuffed bell pepers). There are a lot of traditional dishes and all very tasty and really good.
Also the salad bar is good and the dessert bar mostly on Saturdays and Sundays when traditional sherbet and ice creams are made, are really good.
If you are in Oaxaca and want to try a lot of the different flavors of the state, without paying an exorbitant price this is the place to go.
