The difference between a good Chef and a great Chef, and a good restaurateur and a great restaurateur is one that listens to their customers (see my earlier review). Chef JohnRoss offered us two free dinners if we would return after our disappointing first visit. The nauseating loud jazz music has been replaced by popular music at a background pleasant level. Our Waiter (Warren) was attentive and highly professional. All four us ordered something different for each course, and every dish was outstanding. JohnRoss came out from the busy kitchen to talk to us. Many people will go to Noble Bistro because of him and his reputation and I believe his presence in the dining room (when he can spare the time) adds to the experience for his clients. JohnRoss continues to make changes, and there is no doubt this will fast become the #1 restaurant in Oakville.
