I went to a few Michelin starred restaurants in the past. Going to a 3 star today, i was expecting a reminder of what perfection is. And i got it all right. On all levels
First the menu - the chef is Christian Jürgens, his specialty is a special potato dish with truffel. So we got this special truffel menu, with the king dish, the Cube (see picture). Everything in this menu was very fine art to the finest level, from the amuse bouche to the latest patisserie. The progression of dishes to the main one was very well built, wine / food associations was perfect.
And then all the side things that made a 3 star restaurant: the pacing was perfect, the bread was refreshed at will and kept warm, service was high class without being heavy, wine was at perfect temperature, chairs were comfy... nothing to add really.
Now obviously you have to be ready to pay for it : 770 euros for 2, and we took only wine for one :)
So i wouldn't go there more than once every 3 years, otherwise I'd be spoiled. But this is definitely my new and latest definition of perfection. At a perfect price of course !
