The breakfast buffet has many food choices but do not have seafoods, no fresh salmon, no unagi, no mussels, no shrimps and mackerels. What caught my taste buds were the mediterranean foods. Very good taste. I liked the falafel and zucchini sauce. Well, this time the Conrad Hotel beats the Fairmont thru foods.

I would best describe the state of Spectrum as being in the doldrums - in a dull and stagnant state. The buffet offerings were so uninspired that I was left just doing the salad bar. We had guests for dinner and i could tell that they shared the same sentiments. The sushi and sashimi could probably have saved the night for me but the depressing state of the whole spread just dampened my appetite. I wonder what’s going on - this is too much of an up and down state of affairs for this hotel outlet.

Buffets are usual fare in any high-end hotel. Fairmont Makati has its own all-day culinary outlet by way of Spectrum. Within its glass-walled-ceiling-high space, patrons can sample a range of local, Chinese, Indian, Japanese, Middle-Eastern and European gastronomic fare. Some of these will be coming from the open kitchen where chefs demonstrate their capabilities. For starters, there`s a variety of salad, soup and bread. Proceed then for the main course. Some will be more popular, such as porchetta, roast lamb, seafood and sashimi, based on the frequency of replenishment at their serving stations. The number of dishes are way more than at a regular meal. Hence, the temptation to over-indulge. Other culinary offerings serve as delectation for the adventurous tongue or for those with acquired tastes. So many to choose but nobody`s complaining. Good bets to end the feast will be the layered chocolate cake or tiramisu, among other pastry choices, downed with brewed coffee. The cuisine options merit at least a “good enough” to “most-liked” rating depending on one`s preferences. Strikingly, the area is not cavernous. It can accommodate more than a hundred but still evenly-spaced to avert any crowded feel. It could be the high-ceiling-glass-walls combination mitigates the noise level. The design scheme likewise provides a casual but classy ambiance. It`s an upper middle class crowd judging from the per-person charge. Notably, a lot of groups is for family bonding, some spanning three generations. Conversations, easily carried out in each table, always enhances any meal shared by family, friends and colleagues.Food, after all, is a social connector and is best relished in nice company and pleasant surroundings.

We had family dinner here and it was generally a pleasant visit with their efficient staff sensitive to our needs. The number of food choices is sufficient although a bit fewer compared to other hotels restaurants nearby. Nonetheless, the food is top class. Good selection of Filipino food, Asian, and Continental cuisines.
