Description: At FISHGAUCHO, we are committed to only providing the freshest seafood, shellfish, local produce, organic meats, and finest tequilas available. Our executive chef, Chris Beckett, has many local resources through farmer market vendors, local farmers, and fisherman to have the best ingredients at his fingertips. This allows him to produce some of the most unique, visually inspiring, and delicious Mexican dishes you will ever try. His commitment to making every dish perfect, starts at the top and flows through him to the entire kitchen staff. Our tequila bar doesn't stop short of striving to offer the best in fine tequilas, hand squeezed, hand muddled margaritas, signature cocktails, local wines, craft and imported beers. We spent countless hours researching the different styles of tequila and mezcal to produce a list of more than 100 of the world's best tequilas from both the lowlands and highlands of Jalisco, Mexico. Every margarita at FISHGAUCHO is hand crafted with fresh-squeezed lime, organic agave nectar, and Blue Agave Tequila. We feel, this combination is the best way to enjoy the perfect margarita. The decor at FISHGAUCHO is mostly used reclaimed wood and metal which was inspired by old world rustic Mexico. Our furniture is truly unique as every piece you see was custom made specifically for FISHGAUCHO. When you're in beautiful downtown Paso Robles, stop by FISHGAUCHO to enjoy a fresh, healthy, and lively Mexican dining experience. We look forward to sharing our love for amazing Mexican food & drink.

The wife and I had lunch and were pleasantly surprised but the creativity of the menu. The chips are not complimentary but served with a variety of salsas and, if you want, guacamole. I had the Dungeness crab and brussel sprout salad. Absolutely unusual and outstanding. My wife had the scallop quesadilla. Equally outstanding. Boards announcing the fresh seafood brought in daily are on the walls. This place isn't cheap but worth every dime. Service was impeccable and the open kitchen very clean.

Seriously hands down best restaurant I have been to in a long time. The ceviche was to die for! Margaritas were amazing and the tacos delicious...get the ahi tuna ones. Very fresh fish. The service was so good everyone takes care of you. Go there and be impressed:)

we had a nice lunch here. Very friendly service.
We had various items and enjoyed all of them. Their twist on the Cobb salad was great, so were the fish tacos. Good wine selection. Pricey.

We ate here while visiting Paso Robles. Very popular on a guiet Sunday afternoon but outdoors was pretty open. This was great as we had out fur baby with us and they are very dog freindly. The food and handcrafted drinks were incredible. I had the lavender citrus cocktail and we shared a "huge" artisan nacho platter. Can't wait to try other creations and libations. The Service was very welcoming and friendly. orders were prompt even though they were quite busy. SO impressed!

I like this place for a fancy dinner. The food is good, but pricey. The drinks are good. The restaurant is noisy unless you sit outside. It also has good location near the park
