“Still one of the best hidden gems in the springs”

Carlos bistro still has some of the best food/service in the springs. The outside would never hint to what a great restaurant it really is. This is our 2nd time there and Carlos (the owner) personally meets you in the parking lot and checks on everything. He is so very proud of the food and dishes he serves. The seafood is outstanding. We had lobster salad, crab legs, veal medallions/marsala, and pasta carbonara. The pasta and veal was extraordinary. Service good. The atmosphere is not stuffy as some places. We'll be back

“Great place! Best pisco sours ever!”

Come in and enjoy great food and warm personal greeting from the owner Carlos. Extraordinary food and service. Carlos even drove up a 95 yo couple's car so they wouldn't have to walk far! Can't say we've eaten at a better place.

“Absolutely Fabulous!”

My husband, son and I had dinner here the other night as a goodbye dinner to our son who is leaving for his first deployment. We couldn't have chosen a better restaurant! We were so impressed with his wine list as well...we chose a bottle from one of our favorite wineries in Healdsburg! You have to try the lobster salad and my husband "raved" about his bone-in ribeye for the following two days. You will not be disappointed. A little pricey but well worth the money and of course...a conversation with the pleasant owner himself.

“Exceptional dining experience...”

I chose Carlos Bistro based on the Trip Advisor feedback and was not disappointed. Owner Carols actually met us at the door and the entire experience was outstanding. I was hosting a small business dinner and the atmosphere was perfect. The food was as good as it gets - the Sea Scallops are as good as advertised and the Veal Chop I has was perfect. I hope you go out of your way to eat here - you will want to return again and again.

“Unusual find in an unexpected place”

We discovered Carlos bistro on Tripadvisor and decided to give it a try. We were amazed. In a somewhat unlikely place, incredibly attentive service brought truly amazing dishes to our table. We did not order alcohol, but Carlos did not make us feel uncomfortable because we did not order alcohol. The atmosphere was very enjoyable, without being stuffy. The food quality and quantity were both excellent. We had lobster tail salad, ahi tuna and halibut. They were all cooked to perfection. Also plenty of vegetables, which is rare in most restaurants. We split a bread pudding dessert, which was heavenly. In short, a memorable evening. Prices are higher than most places, but are reasonable for the food quality and quantity served. A must do in Colorado Springs.
