Columbus, Georgia is a barbecue town. We like mustard based sauce on juicy PORK barbecue. (Pigs were made to be barbecued. There are places where they barbecue the wrong animal.) Pork Butts have fat in 'em. That makes them the right meat to slow cook over a pit of smoldering hard wood coals. The meat here is property cooked, completely cooked, slowly, and still juicy. The sauce is a mustard based sauce, so it is not sweet. Sweet ketchup based barbecue sauce ruins the flavor of good barbecue; however, it does make a good mask for dry, over cooked tasteless meat. So, since the meat is properly cooked here, you don't need to cover up the flavor.
This is a barbecue place. It is not a fancy eatin' place. Don't come here expecting a steak or any of them horse dovers. What you will get is great barbecued pork. Yes, they have chicken and beef, but why would you buy it when you can get pig?
The bread is regular loaf bread. Hey, you aren't coming here to buy bread. The beans are O.K., the Brunswick Stew is good, but you don't come here for anything but barbecue. If you don't want barbecue, go somewhere else. If you want barbecue, come here! (Unless you're a Texan or a Yankee and don't know what barbecue is about! Heck, up north, they think barbecue is a verb!!!)
OH! If you want cheap and good, get a chipped sandwich!
