As a vegetarian, I am wary when someone recommends "the" vegetarian option, but it was delicious al dente pasta with still-crisp vegetables and a divine fresh-herb pesto, the wine and cheese plate was also quite good, excellent pairing of flavors that played off each other with a well-suited local VT red wine. My husband had a burger, which he found to be great as well. We are plannign to visit again this weekend and after reading reviews of other area restaurants we might just stay in the hotel and do dinner at the Red Slate both nights. Looking forward to anotehr stay with great hospitality and food! Thank you!
