Among the dining options at Salamander Spa and Resort (Middleburg, Virginia), the Gold Cup Wine Bar offers informal luxury, including a stool for your purse so you needn’t rest it on the floor. Food is organic, sustainably produced, and locally sourced (The Chef’s garden is on the premises and open for strolling or special dining).
We shared three dishes. From the salad menu, the Roasted Beets with fresh whipped ewe crème and apricot pecan garnish proved satisfying. From the “Social and Sharing Plates,” the Crispy Sesame Cauliflower in a sweet soy ginger glaze with coconut was a delicious adventure. Sandwiches are served with a choice of kettle chips, sweet potato tots, or a side salad. On the waiter’s recommendation, we chose the Virginia sweet potato specialty. The Crabcake BLT was small but well stacked.
Among the entrée offerings, southern Shrimp and Grits and the more worldly Pasta Carbonara, with suggested wine pairings, looked most enticing. The dessert menu offers a kit for s’mores to be taken out to the fire pit, next to the spa’s outdoor infinity pool. Another local twist pairs pumpkin doughnuts with maple crème anglaise and toasted meringue.
