We live on the North Shore of Maui and if we want a gourmet meal prepared outside our own home, we would go to Mama's or Hali'imaile General Store. But very rarely anymore.
Luckily, a couple of years ago we discovered nyloS. The quality of the food and the way it is prepared, paired with perfectly complimentary flavors, textures elevates your dining experience to a whole new level! Every time we have been, Everything has been impeccably scrumptious! We recently celebrated our 29th anniversary there and had an incredible, memorable time. The amusee bouche, the chicken gourgere were amazing in flavor. But the halibut was sublime!! Perfectly sauced, accenting the flavorful and succulent fish without overwhelming it was such a joy!
I lived in Alaska for several years and had many incredible meals of the freshest halibut by seasoned chefs and never have I had any halibut compare to Jeremy's we had last Friday! He said he cooked it for several hours at low temperature via sous vide technique (a circulating hot water bath with the fish in a vacuum- sealed packet). It tasted like the best lobster I've never had! I hate to be using all these exclamation points but they are all warranted!
The wine pairings are spot on and the service you would expect in any high end dining establishment in a major city. We are so lucky to have NyloS. This quality in those same restaurants would cost you at least twice the price, I kid you not!
