Place is impressive at first glance, with all the right elements for a good dining experience--subdued and well thought of lighting; soft mood music; impressive but non threatening table set up and well dressed servers.
And it was an awesome experience.
We had our doubts when we saw the wide selection it offers especially the pricing scheme. So to play it safe, we asked for the most popular ones complemented by their house wine. The servers are well acquainted and knowledgeable about the place's menu and wine and were able to guide us through.
Said doubts were erased. The food was superb, from their appetizers--chicken liver pate, buffalo chicken, deconstructed Caesar's salad, bruschetta to their entree--stewed beef, pan fried grouper, to name a few.
Presentation of food is just a work of art, something you'd expect of a Chef M. Fores' plate. Ingredients are all fresh and well picked.
Pricing is a wonder. Their house wine costs 3x less than average glass in the same category of bistro in Cebu City and its quality is 3x better also.
Kudos to the Chef who shows his passion in his food.
As a result, we have dined here for more than three times since our first visit and our only sad experience is the sound of construction on the upper level and yes, the ladies' room can be further improved to be more comforting.

You ever had those moments where in you are watching TV and you see those really intricate foods displayed in cooking shows like Masterchef Austraila or Top Chef Masters, and then you wonder.. gosh you would just want to be able to experience what it's like to be able to have that kind of dining experience.

Then you wonder.. gee.. that would really cost so much! Well I found a place in Cebu which is newly opened and it serves just that. Those really intricate food that won't hurt the bank. They actually treat food like a work of art and you would just be amazed with the level of artistry they put in a plate.

Service - I would rate it a 2.5, the food might be good but this isn't your 5 star Michelin service quality. For your money though, you wouldn't mind the clumsiness of the waiters. Just sit back and relax and wait for your food while you talk to your friends. They can be annoying sometimes but hey, you can't have everything.

Ambience/Venue/Space - I would definitely rate it a solid 3. It's a bit cramp for large gatherings but it sure is nice for those intimate dinners of 4. Plus the place is kinda tricky to go to. Its location is next to phase one, and you have to go to the other side of the building to be able to go to the venue.

Food - This is a confident 5.0 stars. I would say for the price, you are definitely getting your money's worth. A couple of my favorites would be the crispy red snapper on a bed of cauliflower puree. The fish is perfectly cook and the presentation is just a killer to look at. I would also suggest getting the seafood risotto if you are a fan of italian cuisine since it's just heaven on a plate. The balance of creaminess and the seafood bliss is simply amazing. I would definitely go back for another bite. A must try on their menu which my friends are singing praises for is their short ribs. It was that good that we ordered another plate of it. For dessert, when you go here... don't miss out on the best LAVA cake! I would tell you, you're going to miss out on half of your life.

Price - Brio won't hurt your wallets. Their price ranges from 120 - 160 for their appetizers and dessert, and their entrees ranges from 180-350. Not bad right? The plus side... their wines are so cheap! For one bottle you can get it as low as 340 a bottle to pair it up with your meals.

I must I would definitely put this place on my top of the list for the best new places in Cebu. A must try indeed!
